Traditional Brazilian Chicken Empadão

These beautiful baked pies are soft, flaky, and filled with savory goodness. Perfect for dinner or snacks.

 

Ingredients

 

Dough

 

500 g all-purpose flour

8 g salt

10 g sugar

7 g instant yeast

250 ml warm milk

80 g butter, softened

1 egg

Filling

 

350 g chicken or beef, diced

150 g potatoes, small cubes

100 g onion, chopped

80 g carrots, diced

2 tbsp oil

5 g salt

3 g black pepper

3 g paprika

2 g garlic powder

For Brushing

 

1 egg yolk

1 tbsp milk

Instructions

 

1. Prepare the Dough

 

Mix flour, salt, sugar, and yeast.

Add warm milk, egg, and butter.

Knead for 10 minutes until smooth.

Cover and let rise for 1 hour.

2. Cook the Filling

 

Heat oil in a pan.

Cook onion until soft.

Add meat and cook well.

Add potatoes and carrots.

Season with salt, pepper, paprika, and garlic powder.

Cook for 10 minutes, then cool completely.

3. Shape the Pies

 

Divide dough into equal balls.

Roll each into circles.

Place dough into small pie molds or bowls.

Fill with the meat mixture.

Cover with another dough circle.

Seal edges decoratively like in the picture.

4. Final Proof

 

Let the pies rest for 20 minutes.

5. Bake

 

Brush with egg yolk and milk mixture.

Bake at 180°C for 25–30 minutes until golden brown.

Tips

 

Add cheese for a richer filling.

Mushrooms work very well in the filling.

Serve warm with soup or tea.
